A favorite for Thanksgiving and Christmas

White Fruitcake


Preheat oven to 375; grease and line loaf pan with waxed paper.
1/3 cup brandy
1/2 cup raisins
glaceed cherries (small container) cut in half
Soak at least 6 hours

Combine 1 1/2 sticks butter
3/4 cups sugar
pinch salt
Beat 10 minutes
Add 1 teaspoon vanilla
1/4 tsp nutmeg beat in
Add 3 large eggs one at a time, beating well after each

Combine
2 cups flour
1 TBLSP double acting baking powder
Stir into butter mixture, 1/4 at a time
Drain fruits; add liquid to batter
stir in fruits with 1/2 cup chopped walnuts

Pour into prepared pan, bake 375 deg for ten minutes; reduce to 325, bake 40 minutes or until tester comes out clean.
